Gluten Free Chocolate Macaroons

1/2 c almond milk
1/3 cup cocoa (I use the Frye's Premium Cocoa Brand 'cause it's sugarfree)
1 c. coconut
2 cups oats
1 tsp vanilla
1 cup peanut butter
4-5 tbsp pure organic honey

Stir together over high heat still chocolate and milk has melted together.

Drop spoonfuls onto a waxed paper sheet then add a pecan on top.
Cool in freezer for 10 mins max. :)

Oat Fruit Cookies





When I first saw this recipe, I was intrigued by the fact that they have no butter, eggs, sugar or anything that could be considered unhealthy. This is my favorite vegan, gluten-free, and sugarfree recipie for a cookie. 
Might not call it a 'cookie' though because it's more like a energy bar. So satisfying. :) 

Ingredients 
1/2 cups rolled oats (or any type you want) 
1 tsp cinnamon 
1 cup coconut flakes 
1/2 tsp allspice 
1/2 mixed chopped nuts 
1 cup dried fruit 
3 ripe bananas ( applesauce or 2 eggs) 
1/4 c. canola oil ( or any oil) 
1 tsp vanilla 

Preheat oven to 175 degrees C 
Grease pan with vegetable oil.

In large bowl combine rolled oats, mixed nuts, coconut flakes.
Stir in allspice, & cinnamon and then add dried fruit and stir until evenly mixed.
In another bowl combine oil, banana, vanilla. Pour wet into dry ingredients and stir well. 
Form balls in your hand and flatten slightly. Bake for 20 mins, or until edges are golden. 

Enjoy with a glass of tea or almond milk. :)
